- Combine the potatoes, onion, and broth in a large pot. Bring to a boil, then reduce the heat and simmer until the potatoes are very tender, 15 to 20 minutes.
- Remove from heat. Blend with an immersion blender until smooth, about 1 minute. If using a stand blender, work in batches and vent the lid to release steam.
- Return the soup to low heat and stir in the milk. Heat until steaming, about 3 minutes, but do not let it boil.
- Season with salt and pepper, starting with ½ teaspoon salt and several grinds of pepper, then adjust to taste. Ladle into bowls and serve hot.
Notes
If you prefer a richer soup, swap the whole milk for half-and-half or heavy cream. The soup thickens as it cools, so plan to stir in a splash of warm broth or milk when reheating leftovers. For a slightly rustic texture, reserve a few pieces of cooked potato before blending, mash them, and stir them in at the end.
