- Whisk together milk, maple syrup, vanilla, and salt in a medium bowl. Sprinkle in chia seeds and whisk vigorously for 1 minute until no clumps remain.
- Let sit on the counter for 5 minutes, then whisk again for 30 seconds to break up any gelling seeds.
- Cover and refrigerate for at least 4 hours, ideally overnight.
- Stir the chilled pudding, spoon into two bowls, and top with berries, a drizzle of honey, and toasted nuts if using.
Notes
The creamier texture develops after a full night in the fridge. For a thinner pudding, stir in a little extra milk right before serving. The pudding will keep in the fridge for up to 5 days. Plan ahead: the hands-on prep takes only 5 minutes, but the pudding needs time to chill.
