Ingredients
  

  • 1 lb boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 can (14 oz) diced tomatoes, undrained
  • 3 cups low-sodium chicken broth
  • 8 oz uncooked penne pasta
  • ½ cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • Fresh basil leaves, for serving

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Sear chicken pieces until golden, 5 to 6 minutes, then transfer to a plate.
  2. Lower heat to medium and cook onion until soft, about 3 minutes. Stir in garlic, tomato paste, Italian seasoning, salt, and pepper; cook 1 to 2 minutes.
  3. Add diced tomatoes, broth, and pasta. Bring to a boil, then simmer 10 to 12 minutes, stirring occasionally, until pasta is tender.
  4. Return chicken to the pot along with heavy cream and Parmesan. Stir off the heat until creamy, then serve with fresh basil.

Notes

Let the cream come to room temperature while you prep so it blends in smoothly without curdling. The pasta will keep absorbing liquid as it cools, so if you need to hold it for a few minutes before serving, add an extra splash of warm broth.
