Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup cold unsalted butter
  • 3/4 cup whole milk
  • 1 lb boneless skinless chicken breasts
  • Salt and pepper
  • 4 tbsp unsalted butter, divided
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1 cup chicken broth
  • 1 cup whole milk
  • 1/2 tsp dried thyme
  • 1 cup frozen peas
  • Chopped fresh parsley, optional

Method

  1. Preheat oven to 425°F (220°C). Mix the biscuit dough, drop onto a lined baking sheet, and bake 12 to 15 minutes until golden.
  2. Season chicken, sear in 2 tbsp butter over medium high heat about 4 minutes per side until 165°F (74°C). Rest and slice.
  3. In the same skillet, melt remaining butter, sauté onion 3 minutes, add garlic 30 seconds. Stir in flour 1 minute, then slowly whisk in broth and milk. Simmer until thickened, 5 minutes. Add thyme, peas, and sliced chicken. Heat through.
  4. Split biscuits, spoon the creamed chicken on top, and serve immediately.

Notes

The chicken mixture will thicken as it sits, so serve it right after assembling. If you’re prepping ahead, keep the sauce and biscuits separate until the last minute.
