Cream of Mushroom Gravy Recipe

Ingredients
  

  • 2 tbsp unsalted butter
  • 8 oz cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 1/2 cups low-sodium chicken or vegetable broth
  • 1/4 cup heavy cream
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried)
  • Salt and freshly ground black pepper

Method
 

  1. In a large skillet over medium-high heat, melt the butter. Add the mushrooms in a single layer and cook undisturbed for 3 to 4 minutes until deeply browned on one side. Toss and cook another 2 to 3 minutes until golden and any liquid has evaporated.
  2. Add the garlic and fresh thyme (if using). Cook, stirring, for 30 seconds until fragrant.
  3. Sprinkle the flour over the mushrooms and stir constantly for 1 to 2 minutes to cook the flour.
  4. Gradually whisk in the broth, scraping up any browned bits. Add dried thyme (if using). Bring to a simmer and cook for 3 to 5 minutes, stirring occasionally, until thickened.
  5. Stir in the heavy cream and simmer for 1 minute more. Season with salt and pepper to taste. Serve immediately.

Notes

This gravy thickens as it cools. If making ahead, reheat with a splash of broth or milk and whisk to smooth out. For a vegetarian version, use olive oil instead of butter and vegetable broth.
