- In a large skillet over medium-high heat, melt the butter. Add the mushrooms in a single layer and cook undisturbed for 3 to 4 minutes until deeply browned on one side. Toss and cook another 2 to 3 minutes until golden and any liquid has evaporated.
- Add the garlic and fresh thyme (if using). Cook, stirring, for 30 seconds until fragrant.
- Sprinkle the flour over the mushrooms and stir constantly for 1 to 2 minutes to cook the flour.
- Gradually whisk in the broth, scraping up any browned bits. Add dried thyme (if using). Bring to a simmer and cook for 3 to 5 minutes, stirring occasionally, until thickened.
- Stir in the heavy cream and simmer for 1 minute more. Season with salt and pepper to taste. Serve immediately.
Notes
This gravy thickens as it cools. If making ahead, reheat with a splash of broth or milk and whisk to smooth out. For a vegetarian version, use olive oil instead of butter and vegetable broth.
