Ingredients
  

  • 2 tbsp unsalted butter
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 1 medium russet potato, peeled and diced
  • 4 cups low-sodium vegetable or chicken broth
  • 1/2 cup heavy cream
  • Salt and freshly ground black pepper
  • Fresh lemon juice (optional)

Method
 

  1. Melt butter in a large pot over medium heat. Sauté onion until soft, about 5 minutes, then add garlic and cook 30 seconds.
  2. Add potato, broccoli, and broth. Bring to a boil, then reduce heat and simmer for 12 to 15 minutes until vegetables are tender.
  3. Carefully blend the soup in batches until smooth, about 1 minute. Return to pot (or use an immersion blender).
  4. Stir in heavy cream and warm through over low heat, about 2 minutes. Season with salt, pepper, and lemon juice. Ladle into bowls and serve.

Notes

This soup thickens as it sits. Add a splash of broth when reheating to loosen it. For the smoothest texture, strain the blended soup through a fine-mesh sieve before adding the cream.
