Method
- Beat cold butter, cream cheese, and granulated sugar until fluffy.
- Mix in egg and vanilla, then add flour mixture in two parts until a soft dough forms.
- Scoop into balls, roll in coarse sugar, and place on a lined baking sheet 2 inches apart.
- Bake at 350°F for 10 to 12 minutes, until edges are set and centers look slightly underdone.
- Cool on the sheet for 3 minutes, transfer to a rack, and serve warm or at room temperature.
Notes
Use cold butter and cream cheese straight from the fridge. No chilling step is needed as long as the ingredients are cold and the dough doesn’t get too warm during rolling.
