Cream Cheese Stuffed Chicken Recipe

Ingredients
  

  • 4 boneless, skinless chicken breasts, about 6 oz each
  • 4 oz cream cheese, softened
  • 3 garlic cloves, minced
  • 2 tbsp finely chopped fresh chives
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 2 tbsp olive oil

Method
 

  1. Mix the cream cheese, garlic, chives, and a pinch of salt in a small bowl until smooth.
  2. Cut a horizontal pocket in each chicken breast, keeping edges about ½ inch thick. Spoon filling into each pocket and press closed.
  3. Preheat the oven to 375°F (190°C). Season the chicken all over with salt and pepper. Heat olive oil in an oven‑safe skillet over medium‑high and sear the breasts about 4 minutes per side until golden.
  4. Transfer the skillet to the oven and bake 12 to 16 minutes until the thickest part reaches 160°F internally. Let rest 5 minutes, then slice in half diagonally and serve hot.

Notes

If your chicken breasts are very uneven, gently pound any thick ends with a meat mallet to create a more uniform piece. Remove toothpicks after baking and before slicing.
