Cream Cheese Stuffed Chicken Breast Recipe

Ingredients
  

  • 4 boneless, skinless chicken breasts (about 8 oz each)
  • 4 oz cream cheese, softened
  • 2 tbsp grated Parmesan
  • 1 garlic clove, minced
  • 1 tbsp chopped fresh chives, plus more for serving
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • 1 tbsp olive oil

Method
 

  1. In a small bowl, mix the cream cheese, Parmesan, garlic, chives, half the salt, and pepper.
  2. Cut a deep pocket into the thickest part of each chicken breast. Stuff with the filling, press the edges shut, and secure with a toothpick if needed.
  3. Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the chicken top-side down for 3 minutes, flip, and sear 2 more minutes.
  4. Transfer the skillet to a 400°F (200°C) oven and bake 15 to 18 minutes, until the chicken reaches 165°F (74°C).
  5. Rest the chicken for 5 minutes, remove toothpicks, slice, and serve with pan juices and extra chives.

Notes

Letting the chicken rest before slicing helps the filling stay put. If you don’t have an oven-safe skillet, sear in any pan and then transfer the chicken to a baking dish for the oven step.
