Cream Cheese Spaghetti Recipe

Ingredients
  

  • 8 oz spaghetti
  • 4 oz full-fat cream cheese, softened
  • 2 tbsp unsalted butter
  • 2 garlic cloves, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup reserved pasta water
  • Salt and black pepper
  • Fresh parsley, chopped, for garnish (optional)

Method
 

  1. Cook spaghetti in salted boiling water until al dente, about 8 to 10 minutes. Reserve 1/2 cup pasta water before draining.
  2. Melt butter in a large skillet over medium heat, add garlic, and cook until fragrant, about 1 minute.
  3. Lower heat, add cream cheese and half the pasta water, whisk 1 to 2 minutes until smooth. Stir in Parmesan until melted, adding more pasta water if needed.
  4. Add drained spaghetti to the skillet and toss for 1 minute until well coated. Season with salt and pepper, serve with extra Parmesan and parsley.

Notes

Use the reserved pasta water a splash at a time until the sauce reaches a glossy, pourable consistency. The dish is at its best right after tossing, so have your plates ready.
