- Beat the cream cheese with the powdered sugar and ¼ tsp vanilla until smooth.
- In a shallow dish, whisk the eggs, milk, remaining ¼ tsp vanilla, cinnamon, and salt until frothy.
- Spread the cream cheese mixture onto 4 bread slices, top with the remaining slices, and press gently. Dunk each sandwich in the custard for 15 to 20 seconds per side.
- Melt 1 tbsp butter in a skillet over medium heat. Cook the sandwiches in batches for 3 to 4 minutes per side until deep golden, transferring to a wire rack as they finish.
- Serve immediately with a dusting of powdered sugar and warm maple syrup.
Notes
If your bread is fresh and soft, leave the slices out on the counter for 30 minutes to dry slightly before assembling. This helps them soak up the custard without turning wet.
