- Rub the butter and cream cheese into the flour with your fingertips until the mixture looks like coarse sand with some pea-sized bits remaining.
- Stir in the milk with a fork just until a shaggy dough forms.
- Pat the dough out on a floured surface, fold it in thirds like a letter, turn, and repeat the fold three times. Pat to 3/4 inch thick.
- Cut rounds with a 2.5-inch biscuit cutter and bake at 425°F (220°C) for 12 to 15 minutes until deep golden. Serve hot.
Notes
Cold fat is the only non-negotiable here. If the dough feels greasy or sticky at any point, slide it onto a plate and chill it for 10 minutes before continuing. You can swap in buttermilk for a little extra tang; use 1/2 cup milk plus 1/4 cup cold buttermilk.
