- Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan. In a large bowl, mash bananas, then stir in melted butter, 3/4 cup sugar, egg, and 1 tsp vanilla. Mix in baking soda, salt, and flour until just combined. Fold in sour cream.
- In a small bowl, beat cream cheese, 1/4 cup sugar, egg yolk, and 1/2 tsp vanilla until smooth.
- Spread half the batter into the pan, top with the cream cheese mixture, then cover with remaining batter. Swirl with a knife using a few wide strokes.
- Bake 55 to 65 minutes, until a toothpick inserted in the center comes out with moist crumbs. Tent with foil after 45 minutes if browning too quickly.
- Cool in the pan for 10 minutes, then turn out onto a rack. Slice and serve warm or at room temperature.
Notes
For the neatest slices, let the loaf cool completely. The cream cheese swirl will be soft and slightly gooey when the bread is warm, which is part of its charm.
