Crab Stuffed Flounder Recipe

Ingredients
  

  • 4 (6-oz) flounder fillets
  • 8 oz lump crabmeat
  • ½ cup crushed Ritz crackers
  • ¼ cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp Old Bay seasoning
  • 1 tbsp fresh lemon juice
  • 2 tbsp finely chopped fresh parsley
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 3 tbsp unsalted butter, melted
  • Lemon wedges

Method
 

  1. Combine crabmeat, mayonnaise, Dijon, Old Bay, lemon juice, parsley, salt, and pepper. Fold gently with a fork.
  2. Lay fillets skin side up, spoon 2-3 tablespoons filling onto the wide end of each, and roll up snugly. Place seam side down in a baking dish.
  3. Toss crushed crackers with melted butter and sprinkle over the rolls, pressing lightly to adhere.
  4. Bake at 375°F (190°C) for 20-25 minutes until the fish is opaque and the filling bubbles.
  5. Broil for 2-3 minutes until the topping is deep golden, then serve immediately with lemon wedges.

Notes

The flounder will continue cooking a moment after you pull it from the oven; let it rest just 2-3 minutes before serving. The Ritz topping is at its crunchiest right after broiling, so have your plates ready.
