Ingredients

  • ½ cup unsalted butter
  • 4 cloves garlic, minced
  • 2 tbsp Old Bay seasoning
  • 1 tbsp Louisiana-style hot sauce
  • 1 tsp Worcestershire sauce
  • 1 tsp light brown sugar
  • 2 tbsp fresh lemon juice
  • ½ tsp kosher salt
  • ¼ tsp black pepper

Method

  1. Melt the butter in a small saucepan over medium heat. Add the minced garlic and cook 1 minute until very fragrant but not browned.
  2. Remove from heat, stir in Old Bay, hot sauce, Worcestershire, brown sugar, lemon juice, salt, and pepper. Return to low heat and cook 1 minute until the butter turns deep orange and the spices smell bold. Taste and adjust lemon or salt.
  3. Pour the sauce over a hot seafood boil of crab, shrimp, corn, and potatoes. Toss until glossy and serve right away.

Notes

If the sauce splits while hot, whisk in a splash of warm water to bring it back together. For a smoother texture, you can strain out the garlic bits, but those little flecks carry a lot of flavor.
