Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne
  • 2 medium sweet potatoes (about 1 lb), peeled and cubed
  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 1/2 cup full-fat canned coconut milk, plus extra for serving
  • Salt and black pepper to taste
  • Fresh cilantro and lime wedges, for serving

Method
 

  1. Heat olive oil in a large pot over medium heat. Sauté onion for 5 minutes until soft, then add garlic, ginger, cumin, coriander, turmeric, and cayenne and cook 1 minute more.
  2. Add sweet potatoes, lentils, and broth. Bring to a boil, then reduce heat, cover, and simmer 20–25 minutes until sweet potatoes are tender and lentils have broken down.
  3. Remove from heat and blend about half the soup with an immersion blender, leaving some chunks. Stir in coconut milk and season with salt and pepper.
  4. Ladle into bowls, add a swirl of coconut milk, top with cilantro, and serve with lime wedges.

Notes

If the soup thickens too much after sitting, stir in a splash of water or broth when you reheat it. For a thinner soup from the start, add an extra half cup of broth.
