Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups powdered sugar
  • 2 to 3 tbsp milk
  • Black gel food coloring

Method

  1. Preheat oven to 350°F (175°C). Beat butter and sugar until fluffy, about 2 minutes. Add egg and vanilla, then mix in flour, baking powder, and salt to form a dough.
  2. Shape dough into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
  3. On a floured surface, roll dough to 1/4 inch thick and cut out 2 1/2-inch rounds. Place on lined baking sheets.
  4. Bake 8 to 10 minutes until edges are set and tops are pale. Cool completely on a rack.
  5. Whisk powdered sugar with milk and vanilla to make icing. Divide and color one portion black. Spread white icing on cookies, then pipe or dot black spots. Let set 20 minutes.

Notes

Chilling the dough is hands-off time not counted in the prep minutes. If you bake in batches, keep the unbaked dough rounds in the fridge between oven rotations.
