- Preheat a waffle iron to medium-high. Blend all ingredients until smooth and pourable, about 30 seconds.
- Grease the hot iron lightly. Pour batter into the center, close the lid, and cook until deeply golden and the steam slows, 5 to 7 minutes.
- Plate the waffle and repeat with remaining batter. Serve hot with berries, yogurt, or maple syrup.
Notes
For the best texture, let the batter sit for 5 minutes after blending. Full-fat large-curd cottage cheese makes the most custardy waffles, but small-curd works. These re-crisp perfectly in a toaster, and leftovers freeze well for up to 3 months.
