Ingredients
  

  • 1 lb ground beef (85/15)
  • 2 tbsp taco seasoning
  • 1 cup full-fat cottage cheese
  • 2 cups shredded iceberg lettuce
  • 1 cup diced Roma tomatoes
  • 1 (15 oz) can black beans, drained and rinsed
  • ½ cup shredded sharp cheddar cheese
  • 1 avocado, sliced
  • ¼ cup salsa
  • Lime wedges
  • Fresh cilantro (optional)

Method
 

  1. Crumble the beef into a hot skillet, sprinkle on the taco seasoning, and cook 6 to 8 minutes until browned and crisp.
  2. Warm the drained black beans in a small saucepan with a splash of water over medium-low heat for 3 to 4 minutes.
  3. Divide the beef among bowls, top with cottage cheese, lettuce, tomatoes, cheddar, avocado, beans, salsa, lime, and cilantro. Serve immediately.

Notes

Full-fat cottage cheese gives the creamiest texture, but low-fat works if that’s what you have. For a spicier kick, add pickled jalapeños or a dash of hot sauce.
