Cottage Cheese Sweet Potato Bowl Recipe

Ingredients
  

  • 2 medium sweet potatoes, peeled and cut into ¾-inch cubes
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp ground cumin
  • 1 cup full-fat cottage cheese
  • 2 cups fresh baby spinach or arugula
  • ¼ cup roasted pumpkin seeds
  • 1 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • Honey or maple syrup, to drizzle (optional)

Method
 

  1. Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, salt, pepper, and cumin, spread on a lined baking sheet, and roast 25 to 30 minutes until golden and tender.
  2. Whisk together the extra virgin olive oil, lemon juice, and a pinch of salt and pepper in a small bowl.
  3. Divide spinach between bowls, spoon cottage cheese over the greens, top with roasted sweet potatoes, and scatter pumpkin seeds on top.
  4. Drizzle with the lemon dressing and a little honey if you like, then serve warm.

Notes

If you are short on time, cut the sweet potatoes into smaller ½-inch cubes and roast for 20 to 22 minutes. Roasted potatoes can be made a day ahead and reheated.
