Cottage Cheese Spinach Dip Recipe

Ingredients
  

  • 2 cups full-fat cottage cheese
  • 10 oz frozen chopped spinach, thawed
  • 1/2 cup finely grated Parmesan cheese
  • 1 cup shredded low-moisture mozzarella, divided
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • Pinch of red pepper flakes (optional)

Method
 

  1. Blend the cottage cheese in a food processor for about 1 minute until completely smooth.
  2. Sauté the onion in olive oil over medium heat for 4-5 minutes, then add garlic and squeezed spinach and cook 2 minutes more.
  3. Fold the blended cottage cheese, spinach mixture, Parmesan, 3/4 cup mozzarella, salt, pepper, and red pepper flakes together until combined.
  4. Transfer to an 8-inch baking dish, top with the remaining mozzarella, and bake at 375°F (190°C) for 20-25 minutes, then broil for 2-3 minutes until golden.
  5. Let the dip cool a couple of minutes, then serve hot with chips, crackers, or vegetables.

Notes

This dip is at its creamiest right out of the oven, so plan to serve it as soon as the top is blistered. If you are bringing it to a party, bake it there if possible, or reheat briefly before setting it out.
