Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 cup cold unsalted butter, cubed
  • 1 cup full-fat cottage cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup chopped fresh chives
  • 1 large egg
  • 2 tablespoons whole milk

Method

  1. Whisk the flour, baking powder, salt, and garlic powder in a large bowl.
  2. Cut in the cold butter until the mixture looks like coarse crumbs with pea-sized pieces.
  3. Fold in the cottage cheese, cheddar, chives, and egg until a shaggy dough forms.
  4. Pat the dough 1 inch thick, cut with a 3-inch cutter, place on a parchment-lined sheet, and chill 20 minutes.
  5. Preheat oven to 400°F (200°C), brush scones with milk, and bake 14 to 16 minutes until golden. Serve warm.

Notes

Chill the shaped scones for 20 minutes before baking; this time is not included in the prep time. For the flakiest results, use cold ingredients straight from the fridge.
