- Whisk the flour, baking powder, and salt together in a medium bowl.
- Blend the cottage cheese, eggs, sugar, and vanilla until completely smooth.
- Pour the wet mixture into the dry ingredients and stir just until no dry flour remains.
- Melt butter in a nonstick skillet over medium heat. Drop ¼ cup portions of batter into the pan and cook until bubbles form and pop on top, about 3 minutes per side.
- Stack the pancakes and serve immediately with maple syrup, butter, or fresh fruit.
Notes
If your cottage cheese is especially wet, drain off the excess liquid before blending to keep the batter thick. These pancakes freeze well, too; place parchment between each pancake and freeze in a zip top bag for up to a month, then reheat in the toaster.
