Ingredients
  

  • 8 large eggs
  • 1 cup cottage cheese
  • 1/2 cup whole milk
  • 1 cup shredded sharp cheddar cheese
  • 2 cups fresh baby spinach
  • 1/2 small yellow onion, diced
  • 1 tablespoon butter or olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Method
 

  1. Melt butter in a skillet over medium heat. Sauté onion 3 minutes, add spinach, and cook 2 minutes until wilted. Cool slightly.
  2. Whisk eggs for 1 minute, then add cottage cheese, milk, cheddar, salt, pepper, and garlic powder. Whisk until smooth, about 1 more minute.
  3. Preheat oven to 375°F (190°C). Grease an 8x8-inch dish, spread vegetables on the bottom, pour egg mixture over, and bake 35 to 40 minutes until center is set and top is golden.
  4. Rest casserole 5 minutes, slice into 6 squares, and serve warm.

Notes

For a make-ahead option, assemble the casserole (through step 3) the night before, cover and refrigerate. Add 5 to 10 minutes to the bake time from cold. Leftovers keep well, making this perfect for meal prep.
