Ingredients
Method
- Heat oven to 375°F (190°C) and line a 12-cup muffin tin. Blend cottage cheese, egg, melted butter, and vanilla until completely smooth.
- Whisk flour, sugar, baking powder, 1 tsp cinnamon, and salt in a bowl. Pour in the cottage cheese mixture and stir just until combined.
- In a small bowl, mix brown sugar and remaining 1 tsp cinnamon. Layer batter and cinnamon sugar in the muffin cups, then swirl with a toothpick.
- Bake until golden and a toothpick comes out with moist crumbs, 18 to 20 minutes. Cool in the tin 5 minutes, then move to a wire rack.
- Beat cream cheese and powdered sugar until smooth, then thin with milk to a slow drizzling consistency. Glaze the cooled muffins and serve.
Notes
Use a blender or food processor, not a whisk, to guarantee the cottage cheese turns completely smooth. Cooling the muffins before glazing keeps the drizzle from running off; they should feel just barely warm to the touch.
