Cottage Cheese Chicken Parm Bowl Recipe

Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese, divided
  • 2 large eggs, beaten
  • 1 cup full-fat cottage cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1 1/2 cups marinara sauce
  • Fresh basil leaves, for serving (optional)

Method
 

  1. Blend the cottage cheese, 1/4 cup Parmesan, garlic powder, salt, and pepper in a food processor until smooth. Set aside.
  2. Place panko and the remaining 1/4 cup Parmesan in one bowl, eggs in another. Dip chicken pieces in egg, then dredge in the panko mixture, pressing to coat.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken in a single layer for 3 to 4 minutes per side until golden. Transfer to a plate.
  4. Pour marinara into the same skillet, scraping up browned bits. Bring to a simmer, return chicken to the sauce, and cook for 5 minutes until the chicken is cooked through.
  5. Position a rack 6 inches from the broiler and preheat. Dollop the cheese mixture over the chicken, then broil for 2 to 3 minutes until bubbly and golden. Serve in bowls with fresh basil.

Notes

Serve right away for the crispiest chicken. If your skillet isn't oven-safe, transfer everything to a broiler-safe dish before adding the cheese. The blended cottage cheese mixture can be made a day ahead and stored in the fridge.
