- Stir together the cottage cheese, egg, and salt in a large bowl until combined.
- Fold in the self-rising flour until a shaggy dough forms, then knead gently on a floured surface just until smooth.
- Divide the dough into 6 pieces, roll into balls, and place on a parchment-lined baking sheet 2 inches apart.
- Bake at 375°F (190°C) for 18 to 22 minutes, until deep golden brown and a toothpick comes out clean.
- Brush the hot buns with melted butter and sprinkle with flaky salt if desired. Serve warm.
Notes
If you do not have self-rising flour, use 2 cups all-purpose flour, 2 teaspoons baking powder, and ½ teaspoon salt instead. For the softest crust, drape a clean kitchen towel over the buns for 5 minutes after baking.
