Cottage Cheese Beef Bowl Recipe

Ingredients
  

  • 1 lb lean ground beef (85/15)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup full-fat cottage cheese
  • 2 cups fresh spinach (optional)

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned, about 5 minutes.
  2. Push beef to one side. Add onion to the empty spot and cook for 2 minutes until softened. Stir in garlic and cook 30 seconds until fragrant.
  3. Stir in tomato paste, cumin, paprika, salt, and pepper. Cook for 1 minute, stirring constantly.
  4. Remove skillet from heat. Add cottage cheese and spinach (if using). Stir gently until spinach wilts and cheese softens.
  5. Divide between bowls and serve immediately, topped with a fried egg or fresh herbs if you like.

Notes

Set the skillet off the heat before adding cottage cheese to keep it creamy. If you prefer a thicker texture, drain the cottage cheese first. Any leftover spinach is fine; you can use frozen spinach (thawed and squeezed dry) instead.
