- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned, about 5 minutes.
- Push beef to one side. Add onion to the empty spot and cook for 2 minutes until softened. Stir in garlic and cook 30 seconds until fragrant.
- Stir in tomato paste, cumin, paprika, salt, and pepper. Cook for 1 minute, stirring constantly.
- Remove skillet from heat. Add cottage cheese and spinach (if using). Stir gently until spinach wilts and cheese softens.
- Divide between bowls and serve immediately, topped with a fried egg or fresh herbs if you like.
Notes
Set the skillet off the heat before adding cottage cheese to keep it creamy. If you prefer a thicker texture, drain the cottage cheese first. Any leftover spinach is fine; you can use frozen spinach (thawed and squeezed dry) instead.
