Ingredients
  

  • 3 large ripe bananas
  • 1 cup full-fat cottage cheese
  • 2 large eggs
  • ½ cup melted unsalted butter
  • ¾ cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 teaspoon ground cinnamon (optional)
  • ½ cup chopped walnuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan; blend bananas, cottage cheese, eggs, butter, brown sugar, and vanilla until smooth.
  2. Whisk flour, baking soda, salt, and cinnamon in a large bowl.
  3. Pour the wet mixture into the dry ingredients and fold gently until no dry flour remains; fold in nuts or chips if using.
  4. Scrape batter into the pan, bake for 50 to 60 minutes until a toothpick has a few moist crumbs, cool 10 minutes in pan, then lift out, cool further, and slice.

Notes

Cool the bread for at least 30 minutes before slicing; it’s tempting to cut in early, but the crumb will be too soft to hold together. Using overripe bananas is key—they should be heavily spotted or mostly brown for the best sweetness and moisture.
