Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup cottage cheese (4% milkfat)
  • 2 large eggs
  • 1 ripe medium banana
  • ¼ cup maple syrup or honey
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • ¼ tsp fine sea salt
  • ½ cup milk of choice

Method

  1. Add the oats, cottage cheese, eggs, banana, maple syrup, baking powder, vanilla, salt, and milk to a blender. Blend on high until completely smooth, about 30 seconds.
  2. Preheat the oven to 350°F (175°C) and line an 8-inch square baking dish with parchment paper. Pour the batter into the pan and smooth the top. Scatter any mix-ins and press a few down gently.
  3. Bake for 25 to 30 minutes, until the top is golden and cracked and a toothpick inserted in the center comes out with a few moist crumbs.
  4. Let cool for 5 minutes, then lift out using the parchment. Slice into 9 squares and serve warm with your favorite toppings.

Notes

Swap half the maple syrup for brown sugar if you like a deeper caramel note. For single servings, divide the batter among 4 ramekins and bake 20–22 minutes. The baked oats are soft right out of the oven and firm up as they cool, so a 10-minute rest gives the cleanest slices.
