Ingredients

  • 1 cup full-fat cottage cheese
  • ½ cup grated Parmesan cheese
  • 1 clove garlic
  • 2 tbsp unsalted butter
  • 2 tbsp whole milk
  • ¼ tsp fine sea salt
  • ⅛ tsp black pepper
  • Pinch of freshly grated nutmeg (optional)
  • 12 oz dried fettuccine or pasta of choice
  • Reserved pasta water (about ½ cup)

Method

  1. Combine cottage cheese, Parmesan, garlic, milk, salt, pepper, and nutmeg in a blender. Blend on high until completely smooth, about 30–45 seconds.
  2. Cook pasta in salted boiling water until al dente. Reserve ½ cup pasta water, then drain.
  3. Melt butter in a skillet over medium heat. Add the blended sauce and warm for 2 minutes, stirring frequently. Thin with pasta water as needed.
  4. Add drained pasta to the skillet and toss to coat, adding more pasta water for a silky consistency. Serve right away.

Notes

If the sauce sits too long or gets too hot, it can turn slightly grainy. Adding a spoonful of cold milk or pasta water and stirring vigorously off the heat usually smooths it out again.
