Ingredients
  

  • 1 lb thinly sliced deli corned beef
  • 2 cups finely shredded green cabbage
  • ½ small red onion, thinly sliced
  • 2 tbsp fresh lime juice
  • ½ tsp granulated sugar
  • Salt
  • 8 small corn tortillas
  • ½ cup sour cream
  • 1 tsp lime zest
  • 1 tsp hot sauce
  • Fresh cilantro, for serving (optional)

Method
 

  1. Toss the cabbage, red onion, lime juice, sugar, and a pinch of salt in a bowl and let sit at least 5 minutes.
  2. Mix the sour cream, lime zest, and hot sauce in a small bowl until smooth.
  3. Heat a large skillet over medium-high. Add the corned beef pieces in a single layer and fry 3 to 4 minutes, flipping once, until crisp and deeply browned.
  4. Warm the tortillas over a flame or in a dry skillet, then fill with crispy beef, slaw, crema, and cilantro. Serve with lime wedges.

Notes

If you have 10 extra minutes, let the slaw sit while you crisp the beef; the cabbage gets softer and the flavor deepens. For a family-style setup, set out all the components and let everyone build their own tacos.
