Ingredients
  

  • 2 tbsp whole black peppercorns
  • 1 tbsp yellow mustard seeds
  • 1 tbsp coriander seeds
  • 1 tbsp dill seed
  • 1 tbsp whole allspice berries
  • 1 tbsp crushed red pepper flakes
  • 1 tbsp ground ginger
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 2 bay leaves, crushed
  • 1/4 cup coarse kosher salt

Method
 

  1. Crack the peppercorns, mustard seeds, coriander, dill, and allspice in a spice grinder until coarse, about 30 seconds.
  2. Combine the cracked spices with the red pepper flakes, ground ginger, onion powder, garlic powder, crushed bay leaves, and kosher salt in a bowl and stir until evenly mixed.
  3. Transfer the blend to a clean jar, seal tightly, and label with the date. Shake before using.

Notes

The salt settles over time, so always give the jar a good shake before you measure. This recipe yields enough to season a 3 to 4 pound corned beef brisket. If you like a slightly sweeter brine, mix in 1 to 2 tablespoons of brown sugar when you stir the blend together.
