Ingredients

  • 4 large egg whites
  • 1 cup fresh baby spinach, roughly chopped
  • ¼ cup crumbled feta cheese
  • 2 tbsp cream cheese, softened
  • 1 tbsp oil-packed sun-dried tomatoes, drained and finely chopped
  • ¼ tsp garlic powder (optional)
  • 2 large whole wheat or multigrain tortillas (10-inch)
  • Salt and black pepper
  • Neutral oil or cooking spray

Method

  1. Mix the cream cheese, sun-dried tomatoes, garlic powder if using, and a pinch each of salt and pepper. Set aside.
  2. Whisk egg whites with a pinch of salt and pepper. Cook in a lightly oiled nonstick skillet over medium heat, stirring occasionally, until nearly set. Add spinach and feta, cook until spinach wilts and cheese softens, about 2 minutes.
  3. Spread the cream cheese mixture down the center of each tortilla. Spoon the egg mixture on top. Fold in the sides and roll tightly.
  4. Place wraps seam-side down in a dry skillet over medium heat. Toast 1 to 2 minutes per side until golden and crisp.
  5. Slice in half and serve warm.

Notes

For make-ahead mornings, assemble the wraps without toasting, wrap tightly, and refrigerate. Toast in a skillet just before eating. If you prefer a flatter egg, cook the whites as a single omelette instead of scrambling.
