- Melt the butter in a large skillet over medium heat. Add the garlic and cook for about 1 minute until fragrant.
- Reduce heat to medium-low, add the cream cheese, and whisk until smooth, about 2 minutes.
- Pour in the heavy cream and whisk to combine. Add the Parmesan a little at a time, whisking until melted. Simmer for about 5 minutes, stirring often, until the sauce thickens. Season with salt, pepper, and nutmeg if using.
- Toss the sauce with hot cooked pasta, thinning with pasta water if needed, and serve immediately with extra Parmesan.
Notes
The sauce thickens fast as it cools, so work quickly once it comes off the stove. If you’re holding it for a few minutes before serving, cover the pan and keep it over very low heat, stirring occasionally.
