- Toast the almonds: Heat oven to 350°F (175°C). Spread almonds on a small baking sheet and toast for 5 to 7 minutes until golden and fragrant, then let cool.
- Whisk the dressing: In a small bowl whisk vinegar, honey, and Dijon. Slowly drizzle in olive oil while whisking until thick, then season with salt and pepper.
- Massage the kale: Tear kale into bite-sized pieces, add to a bowl with a pinch of salt and a tablespoon of dressing. Massage by hand for 60 to 90 seconds until darkened and softened, then add cabbage and toss.
- Toss and serve: Add remaining dressing and toasted almonds to the bowl, toss to coat, and adjust seasoning. Serve immediately or let sit 10 minutes before serving.
Notes
The dressing can be made up to a week ahead and stored in the fridge. The salad tastes even better after a short rest, and it keeps its crunch for days without wilting.
