- Preheat oven to 350°F. Grease two 8-inch round pans and line with parchment. Whisk flour, cocoa, baking soda, baking powder, and salt.
- Cream butter and sugar until fluffy, about 3 minutes. Add eggs one at a time, then vanilla.
- Alternate adding dry ingredients with buttermilk and coffee, mixing on low. Stir in sour cream just until combined.
- Divide batter between pans. Bake 30 to 35 minutes until a toothpick comes out with moist crumbs. Cool 10 minutes in pans, then transfer to a rack to cool completely.
- Beat butter for frosting until smooth. Gradually add powdered sugar and cocoa, then cream, vanilla, and salt. Whip 2 minutes until fluffy.
- Place one cake layer on a plate, spread frosting on top. Add second layer upside down. Frost top and sides. Crush cookies and scatter over the cake. Arrange toy trucks and chocolate rocks.
Notes
The toy vehicles are non-edible and should be removed before cutting. Frosting can be made a day ahead; store it covered in the refrigerator, then let it come to room temperature and rewhip before using.
