Ingredients
Method
- Rinse the moong dal and rice together under cold water until the water runs clear, then drain well.
- Heat ghee in a heavy pot over medium heat. Add cumin seeds and let them sizzle for about 30 seconds. Stir in asafoetida if using.
- Add the rinsed dal, rice, turmeric, and salt to the pot. Stir to coat, then pour in 3 cups of water. Bring to a boil, cover with a small steam vent, reduce heat to low, and simmer for 25 to 30 minutes until soft and creamy, stirring once or twice.
- Ladle into bowls, drizzle with extra ghee, and serve hot with yogurt and pickle.
Notes
The khichdi will continue to thicken as it sits, so take it off the heat just before it reaches your ideal spoonable consistency. For a thinner, more porridge-like texture, stir in an extra ¼ to ½ cup of hot water just before serving.
