Cold Sesame Noodles Recipe

Ingredients
  

  • 8 oz dried lo mein noodles or spaghetti
  • 3 tbsp soy sauce
  • 3 tbsp tahini
  • 1 tbsp toasted sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp granulated sugar
  • 1 clove garlic, minced
  • 1 tsp grated fresh ginger
  • 2 to 3 tbsp warm water
  • 2 scallions, thinly sliced
  • 1 tbsp toasted sesame seeds
  • Optional: 1 to 2 tsp chili oil or crisp

Method
 

  1. Cook the noodles according to package directions, drain, and rinse under cold water until cool. Transfer to a large bowl.
  2. In a small bowl, whisk together the tahini, soy sauce, sesame oil, rice vinegar, sugar, garlic, and ginger. Thin with warm water, one tablespoon at a time, until the sauce is smooth and pourable.
  3. Pour the sauce over the noodles and toss until well coated. Top with scallions, sesame seeds, and chili oil if using. Serve immediately or let rest for 10 minutes.

Notes

If making ahead, you can store the sauce separate from the noodles and toss them together just before serving. This keeps the texture at its best and avoids the noodles getting too thick. For a room-temperature bowl, pull the dish from the fridge about 15 minutes before you plan to eat.
