Ingredients
  

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp instant espresso powder
  • 1/4 cup granulated sugar (for rolling)
  • 1 tsp instant espresso powder (for rolling)

Method
 

  1. Preheat oven to 350°F. Cream the butter, sugars, and 1 tbsp espresso powder until light and fluffy, then beat in the egg and vanilla.
  2. Whisk flour, baking soda, and salt; mix into the butter mixture just until combined.
  3. Stir the rolling sugar with 1 tsp espresso powder. Scoop dough, roll in the coffee sugar, and place on ungreased baking sheets 2 inches apart.
  4. Bake 10 to 12 minutes until edges are golden. Cool on the sheet 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes

The dough can be made a day ahead and refrigerated; let it sit at room temperature for 15 minutes before scooping. Instant espresso powder is often found in the coffee aisle or in bulk spice sections.
