Coffee Loaf Cake Recipe

Ingredients
  

  • 1 3/4 cups (220g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp fine sea salt
  • 1/2 cup (113g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, at room temperature
  • 2 tsp vanilla extract
  • 1/2 cup (120g) sour cream, at room temperature
  • 2 tbsp instant coffee granules, dissolved in 2 tbsp hot water and cooled
  • 1 cup (120g) powdered sugar
  • 1 tbsp instant coffee granules, dissolved in 1 tbsp hot water and cooled
  • 2 to 3 tbsp whole milk or heavy cream

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment. Whisk flour, baking powder, baking soda, and salt in a bowl.
  2. Dissolve 2 tbsp instant coffee in 2 tbsp hot water and let cool. Beat butter and sugar until fluffy, about 2 minutes. Add eggs one at a time, then vanilla and cooled coffee mixture.
  3. Mix in one third of the flour mixture on low, then add all the sour cream, another third of flour, and finally fold in the rest by hand with a spatula.
  4. Scrape batter into pan; bake 50-55 minutes until golden and a toothpick comes out with moist crumbs. Cool in pan 10 minutes, then lift out and cool completely on a rack.
  5. Whisk powdered sugar, the second dissolved coffee mixture, and 2 tbsp milk. Drizzle over cooled loaf, let set 5 minutes, and slice.

Notes

Cool the loaf fully before glazing, or the glaze will run off. Room temperature butter, eggs, and sour cream are key for a smooth batter. The cake slices cleanly when chilled for 15 minutes.
