Method
- Whisk flour, granulated sugar, baking powder, baking soda, and salt in a large bowl.
- In a small bowl, mix ¼ cup brown sugar with 1 tsp cinnamon for the swirl. In another bowl, combine ½ cup flour, ⅓ cup brown sugar, and 1 tsp cinnamon, then cut in 3 tbsp cold butter until crumbly.
- In a medium bowl, whisk melted butter, sour cream, milk, eggs, and vanilla until smooth.
- Fold wet ingredients into dry until just combined. Spoon half the batter into a greased 12-cup muffin tin, sprinkle the swirl on top, then cover with remaining batter.
- Preheat oven to 400°F (200°C). Press streusel onto each muffin top and bake 18 to 20 minutes until golden and a toothpick comes out clean. Cool in pan 5 minutes, then transfer to a rack and serve warm.
Notes
Let the muffins rest in the pan for the full 5 minutes before moving them; the streusel sets as it cools and will stick to the liner if you rush it.
