Cod Tacos with Cabbage Slaw Recipe

Ingredients
  

  • 1 lb cod fillets, about 1 inch thick
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp salt, plus more for the slaw
  • 2 tbsp olive oil
  • 3 cups shredded cabbage (green and red mix)
  • ⅓ cup plain Greek yogurt
  • 2 tbsp fresh lime juice
  • 8 small corn or flour tortillas

Method
 

  1. Pat the cod dry and season both sides with chili powder, cumin, garlic powder, and ½ tsp salt.
  2. Heat the olive oil in a large skillet over medium-high. Sear the cod for 3-4 minutes on the first side, then flip and cook 2-3 minutes until flaky and opaque.
  3. While the fish cooks, toss the shredded cabbage with the yogurt, lime juice, and a pinch of salt.
  4. Warm the tortillas in a dry skillet, flake the cod with forks, and assemble the tacos with a generous pile of slaw and a squeeze of lime.

Notes

This dish is best eaten right away while the cod is warm and the slaw is crisp. If you want to prep ahead, shred the cabbage and mix the yogurt-lime dressing separately, then toss just before serving.
