- Heat oil in a large skillet over medium heat. Add onion and cook for about 5 minutes until soft and translucent.
- Stir in garlic, ginger, turmeric, cumin, coriander, garam masala, and cayenne. Cook, stirring constantly, for 30 to 60 seconds until fragrant.
- Pour in coconut milk and tomatoes with their juices. Add salt. Bring to a simmer and cook for 5 to 7 minutes until slightly thickened.
- Nestle the cod chunks into the sauce. Cover and simmer gently for 4 to 6 minutes, until the fish flakes easily.
- Taste and adjust salt. Remove from heat, top with cilantro, and serve with lime wedges.
Notes
Leftovers keep well in the fridge for up to 3 days. Reheat gently with a splash of water to loosen the sauce. The fish will be a bit more delicate after sitting but still delicious.
