Cod Fish Curry Recipe

Ingredients
  

  • 1 ½ lbs cod fillets, cut into 2-inch chunks
  • 1 tbsp neutral oil
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp grated fresh ginger
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp garam masala
  • ¼ tsp cayenne pepper
  • 1 can (14 oz) full-fat coconut milk
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 1 tsp kosher salt
  • Fresh cilantro, for serving
  • Lime wedges, for serving

Method
 

  1. Heat oil in a large skillet over medium heat. Add onion and cook for about 5 minutes until soft and translucent.
  2. Stir in garlic, ginger, turmeric, cumin, coriander, garam masala, and cayenne. Cook, stirring constantly, for 30 to 60 seconds until fragrant.
  3. Pour in coconut milk and tomatoes with their juices. Add salt. Bring to a simmer and cook for 5 to 7 minutes until slightly thickened.
  4. Nestle the cod chunks into the sauce. Cover and simmer gently for 4 to 6 minutes, until the fish flakes easily.
  5. Taste and adjust salt. Remove from heat, top with cilantro, and serve with lime wedges.

Notes

Leftovers keep well in the fridge for up to 3 days. Reheat gently with a splash of water to loosen the sauce. The fish will be a bit more delicate after sitting but still delicious.
