- Rinse the rice under cold water until the water runs mostly clear. In a medium saucepan, combine the rice, coconut milk, water, and salt. Bring to a boil over high heat, then reduce heat to low, cover, and cook for 12 minutes.
- Quickly lift the lid, scatter the pineapple and sugar over the rice, stir once gently, cover, and cook 5 more minutes on low. Remove from heat and let the pan sit covered for 5 minutes.
- Fluff the rice with a fork, sprinkle with toasted coconut flakes, and serve warm.
Notes
Let the rice rest off heat for those final 5 minutes so the grains firm up just enough. If you are making this ahead, hold off on adding the toasted coconut until just before serving so it stays crisp.
