- Heat the oven to 400°F (200°C). Whisk the coconut flour, baking powder, and salt in a bowl.
- Beat the eggs, then stir in the melted butter and milk. Pour the wet mix into the dry and stir until a sticky dough forms. Let it rest for 2 minutes.
- Line a baking sheet with parchment. Drop 8 portions of dough onto the sheet and pat each into a 3/4-inch-thick round with damp fingers.
- Bake for 12 to 14 minutes, until the bottoms are deep golden. Cool on the sheet for 2 minutes, then serve warm.
Notes
Letting the dough rest before shaping is key; it thickens as the coconut flour absorbs the liquid. If the dough still feels too sticky, wet your hands lightly instead of adding more flour.
