Coconut Energy Balls Recipe

Ingredients
  

  • 1 cup (150g) packed pitted Medjool dates
  • 1 cup (140g) raw almonds
  • 3/4 cup (60g) unsweetened shredded coconut, divided
  • 2 tablespoons melted coconut oil
  • 1/2 teaspoon vanilla extract
  • Pinch of fine sea salt

Method
 

  1. Add dates and almonds to a food processor. Pulse until coarsely ground, about 30 seconds.
  2. Add 1/4 cup of the shredded coconut, coconut oil, vanilla, and salt. Process until the mixture clumps when pressed, about 30 seconds more.
  3. Scoop tablespoonfuls and roll into balls. Dampen hands if the dough sticks.
  4. Spread the remaining 1/2 cup coconut on a plate. Roll each ball to coat, pressing gently.
  5. Refrigerate on a parchment-lined plate for 15 minutes to firm up. Serve chilled or at room temperature.

Notes

If your dates feel dry or hard, soak them in hot water for 5 minutes and drain well before using. The balls freeze well for up to 3 months; layer between parchment in an airtight container.
