- Place the pitted dates, 1/2 cup shredded coconut, melted coconut oil, and salt in a food processor. Pulse until the mixture resembles coarse sand and clumps together when pressed, about 1 minute. Add a teaspoon of water if the dough seems dry.
- Scoop a scant tablespoon of the dough and roll it into a smooth ball between your palms. Repeat with the remaining dough to make about 12 balls. Lightly wet your hands if the dough sticks.
- Spread the 1/4 cup shredded coconut on a small plate. Roll each ball in the coconut to coat evenly, then arrange on a plate. Serve immediately or refrigerate for 10 minutes to firm up.
Notes
If the dough feels too sticky to roll, chill it for 5 minutes. The balls keep well in an airtight container in the fridge for up to a week or frozen for 3 months. Bring them to room temperature for a few minutes after freezing for the softest bite.
