Coconut Crusted Fish Recipe

Ingredients
  

  • 4 white fish fillets (about 6 oz each)
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup unsweetened shredded coconut
  • ½ cup panko breadcrumbs
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 3 to 4 tablespoons vegetable oil
  • ⅓ cup mayonnaise
  • 1 tablespoon fresh lime juice
  • 1 to 2 teaspoons chili garlic sauce or sriracha

Method
 

  1. Pat fish dry and season lightly with salt. Set up a breading station with flour on a plate, beaten eggs in a bowl, and coconut mixed with panko, ½ tsp salt, and pepper on a second plate.
  2. Dredge each fillet in flour, then egg, then press firmly into the coconut mixture to coat well.
  3. Heat oil in a large skillet over medium heat. Cook fillets about 4 minutes per side until deeply golden and cooked through.
  4. Stir together mayonnaise, lime juice, and chili garlic sauce. Serve fillets hot with the sauce on the side.

Notes

If your fillets are on the thicker side, lower the heat just a touch after flipping so the crust does not burn before the center is done. The chili lime mayo can be made a day ahead and kept in the fridge.
