Method
- Preheat oven to 350°F. Mix flour, 1/4 cup sugar, and 1/4 tsp salt. Cut in butter until crumbly, press into an 8-inch square pan, and bake 12-15 minutes until golden.
- Whisk 1/2 cup sugar, cornstarch, and 1/4 tsp salt in a saucepan. Add coconut milk, whole milk, and egg yolks; cook over medium heat, whisking constantly, until thick and bubbling, about 5-7 minutes. Remove from heat and stir in vanilla, coconut extract, and shredded coconut.
- Pour custard over cooled crust and spread evenly. Press plastic wrap onto the surface and chill at least 2 hours until firm.
- Whip heavy cream, powdered sugar, and 1/2 tsp vanilla to soft peaks. Spread over chilled custard, top with toasted coconut, and slice into squares.
Notes
The chill time of 2 hours is not included in the total time above. The bars need that time to set completely before you add the whipped cream and slice.
