Ingredients
  

  • 1 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 tsp fine sea salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 tsp fine sea salt
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/2 cup whole milk
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1/2 tsp coconut extract, optional
  • 1/4 cup unsweetened shredded coconut
  • 1 cup cold heavy cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup toasted unsweetened coconut flakes

Method
 

  1. Preheat oven to 350°F. Mix flour, 1/4 cup sugar, and 1/4 tsp salt. Cut in butter until crumbly, press into an 8-inch square pan, and bake 12-15 minutes until golden.
  2. Whisk 1/2 cup sugar, cornstarch, and 1/4 tsp salt in a saucepan. Add coconut milk, whole milk, and egg yolks; cook over medium heat, whisking constantly, until thick and bubbling, about 5-7 minutes. Remove from heat and stir in vanilla, coconut extract, and shredded coconut.
  3. Pour custard over cooled crust and spread evenly. Press plastic wrap onto the surface and chill at least 2 hours until firm.
  4. Whip heavy cream, powdered sugar, and 1/2 tsp vanilla to soft peaks. Spread over chilled custard, top with toasted coconut, and slice into squares.

Notes

The chill time of 2 hours is not included in the total time above. The bars need that time to set completely before you add the whipped cream and slice.
